Setting to two stars is probably good enough - one star is a little too easy, and zero stars you can probably easily go undefeated for an entire season and rack up a ridiculous amount of goals. Another thing that I found helpful at first was to turn down the difficulty to get a good handle on the controls. But after a while, I got a better sense of when to let go of the button and found more success that way. When I first started, I would invariably shoot it over the net. It does admittedly take some time to get used to the shot meter. So it's always a good idea to work your way in a bit first. Taking shots from outside the penalty area rarely seems to work, unless it goes off another player first. You want to be able to capitalize on all your goal scoring opportunities.
You tend to get more free kicks on higher difficulty levels (or at least I do anyways), so it's helpful to spend some time in training to work on them. So make sure you can nail the lob every single time - I think I throw away at least one good opportunity a game because I mess up the lob and send the ball into the crowd. Lobbing the ball over the keeper is almost a guaranteed goal if you manage to engineer a one-on-one situation. This doesn't work quite as well on higher difficulty levels though. Another thing that I find works is to work towards the net with the winger and take a shot - the goalie will almost always save it, but give up a massive rebound for a tap-in goal. Flinging crosses to the striker(s) in the middle works pretty well to get some good header goals.
